Lemon Herb Grilled Chicken

Servings: 4

Ingredients:

4 boneless, skinless chicken breasts

¼ cup Olive Amelia's Tuscan Herb Olive Oil

2 tbsp. Olive Amelia's Sicilian Lemon Balsamic Vinegar

2 cloves garlic, minced

1 tsp Dijon mustard

1 tbsp. fresh lemon juice

Zest of 1 lemon

1 tsp. honey

3 tbsp. Salt Sisters Mama Mia's Herb Blend

Instructions:

  1. Make the marinade: In a bowl, whisk together the Tuscan Herb Olive Oil, Sicilian Lemon Balsamic, garlic, Dijon mustard, lemon juice, zest, honey, and herb blend until well combined.

  2. Marinate the chicken: Place the chicken breasts in a zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, preferably 2-4 hours for maximum flavor.

  3. Preheat the grill: Heat your grill to medium-high heat (375-400°F). Lightly oil the grates to prevent sticking.

  4. Grill the chicken: Remove the chicken from the marinade, letting excess drip off. Grill for 5-7 minutes per side, or until the internal temperature reaches 165°F.

  5. Rest and serve: Let the chicken rest for 5 minutes before slicing. Garnish with fresh herbs and serve with spring vegetables or a light salad.
