Ingredients:
- ½ lb cooked, peeled, deveined shrimp, chopped
- ½ tsp. Olive Amelia's Mango Balsamic Vinegar
- 2 tbsp. Olive Amelia's Persian Lime Olive Oil
- 8-10 medium basil leaves, chopped
- 2 tsp. fresh ginger, grated
- ½ mango, finely diced
- 1 ½ tbsp. lime juice
- fresh pepper to taste
- ¼ teaspoon salt
- 24 endive Leaves (about 3 small heads)
Preparation:
- Remove endive leaves and wash gently, allow to dry.
- Combine all of the ingredients into a bowl.
- Spoon mixture onto the endive leaves.
The shrimp mixture can be made about 1 hour before serving.
Endive leaves should be filled no more than 30 minutes prior to serving.
